Oil-Free Giz-Dodo

Ingredients:
Gizzard
Plantain
Onion, pepper, tomato sauce
Salt, pepper to taste
Instructions:
Air-fry diced and seasoned gizzard in air-fryer for 10-15 minutes
Air-fry diced plantains in air-fryer for 10-15 minutes
Blend onion, tomatoes and peppers together and pour in pam; place on medium heat; cook for 7-10 minutes or until water reduces significantly.
Add salt and pepper (and bouillon -optional).
Add gizzard and plantain and mix.
Cover and let sit for a few more minutes.
Serve & Enjoy.

Assuming a cup will contain about 0.3 cup gizzard, 0.6 cup plantains, 2 tablespoons of tomato/pepper/onion mix.
